The historic centre of Mérida is a magnificent ensemble of colonial buildings, plazas and churches centred on the Cathedral of San Ildefonso and the Paseo de Montejo, a beautiful boulevard of Porfirian mansions that recall the city's 19th century henequen boom. The food scene is exceptional, with Yucatecan cuisine — cochinita pibil, panuchos, sopa de lima and poc chuc — representing one of Mexico's most distinctive and delicious regional traditions. The Sunday morning market and free concerts on the Plaza Grande provide outstanding local cultural life. Uxmal, the most beautiful of the great Mayan sites, is one hour south. The Celestún Biosphere Reserve, home to thousands of flamingos, is 90 minutes west.
